Singori (सिंगोड़ी)

The Famous Sweet of  Uttarakhand

Singori is a testy sweet which is a specialty of Kumaon and is prepared from Khoya & coconut. A special feature of this sweet is that is requires a leaf named ‘Molu” which is found in the hills of Uttrakhand.According to some historians the origin of Singori is believed to be the old province of Tehri. It is traditionally made with khoya wrapped in form of a cone with Maalu leaves.

The dessert is prepared from Khoya and served wrapped like a cone in Molu leaf.

Singori/Singodi is a cone shaped sweet exclusively available in the kumaon region of Uttarakhand.

Mandua ki roti is a simple and nutritious chapatti made of wheat flour, mandua flour. Mandua ki roti is staple food in many parts of north India especially from the Kumauni cuisine which is the food of the Kumaon region of Uttarakhand, India.U ttarakhand is known for its characteristic food items, one of which is Mandua ki roti of Uttarakhand. This dish is highly popular with visitors and tourists to the area. Mandua ki roti of Uttarakhand is usually served as the main course.

Mandua Ki Roti in Uttarakhand happens to be the local term for chappatis which are made from the cereal called Mandua. Uttarakhand’a mandua ki roti is one of the principal type of main courses native to the Uttarakhand region and representative of the local cuisine.

Bhaang Ki Chutney (भांग की चटनी)

Bhaang Ki Chutney A recipe unique​ to Uttarakhand it is called is a simple side dish made from grinding roasted bhaang or hemp seeds; and then adding cumin, jaggery, salt, red /green chillies.

It is better to use a sil-batta to grind and not a mixie. Hard work does taste different.
It is a signature recipe of the Uttarakhand cuisine, made with Bhaang aka Hemp seeds, ground to make a delicious chutney that can be served as an accompaniment to other dishes. Infused with traditional Indian Bhaang or Hemp seeds , the strong flavors of this chutney will transform any and all of your meals.

If you add those big Pahari lemons we have grown up eating , the taste is tangier. Better. The chutney tastes best with simple jeera aloo, poori, pahari aloo ke gutke…actually everything including daal chawal.

Bhatt Ki Churdkani (भट्ट की चुड़कानी)


Bhatt Ki Churdkani is a traditional kumaoni recipe. This recipe is made from Bhatt Dal (Black Bean) and is considered as one of the healthiest dishes of the Uttarakhand.Bhatt is a black soyabean and one of the most iconic dishes of Kumaon. Churkani has a takda of local herbs, ghee, and small chopped onion. It’s served with rice and lots of ghee is poured into it while cooking for better taste.
Being prepared from black bhatt blended with rice paste and ordinary flour, Bhatt Ki Churdkani also has a very high nutritive value. Bhatt Ki Churdkani is bestowed with all the various essential elements like vitamins, proteins, minerals, etc.

Aarsa (अरसा)


A sweet delicacy prepared from Rice and Jaggery & cooked in mustard oil, generally served on the occasion of marriages and festivals. The flavour is so prominent that once eaten, you wouldn’t forget the taste for long.Arsa is a sweet delicacy that is prepared on special occasion like marriages and festivals. It is one of the favourite foods for the people in Uttaranchal.

Ghughute aur Khajoore



Ghughutiya, which is also known as “kale kauwa” (literally translated as black crow) is celebrated by preparing the sweet delicacy “ghughute”.
Ghughute are prepared by kneading wheat flour into dough mixing it with jaggery and using milk or ghee according to one’s capacity.
